Traditional Japanese Hunter

Japanese knifemaker Takeshi Saji makes knives using the very best materials. The White Steel center core of this 6" blade, which provides the cutting edge, is a pure carbon steel with a Rockwell hardness above 60. Each side consists of 11 layer Suminagashi, the Japanese equivalent of Damasteel. This is high-carbon tool steel and must be protected against rust. We have included a bottle of RustFree for that purpose.

Koji Hara Sakai Cutlery Collaboration

Before the Rockwell tester, the File & Wire mark was used to indicate that the hardness and toughness of a blade had passed the file and wire test. The test consisted of cutting the edge bevel with a new file to test the hardness and then tapping the blade edge through a piece of wire of a known hardness to test the toughness. If the edge was not blunted by the wire, it passed the test and was marked with "File & Wire Tested".
