Our seconds are cosmetically imperfect knives that are fully functional and carry our Customer Satisfaction Guarantee. Each knife is marked with a notch on the lower edge of the ricasso.

There are two reasons for these five kitchen knives. The first was a desire on my part, and requests from customers, to repeat the little peeler we had made in Japan over 20 years ago. That knife was part of a set which we decided to not continue. We had so many requests for that peeler we had to re-think it. The second reason resulted from continual customer requests for a small set of good, but basic kitchen knives – what you might call a starter set.

This is a project that A.G. and I began working on nearly five years ago. We attempted to get them made in Taiwan and in China without success. No one seemed capable of making the peeler blade thin enough to accomplish what it was designed to do. Not only is it necessary to grind the blade thin, but it also has to be tapered from the spine to the edge AND from the handle to the tip of the blade. The whole reason for it's existence is as a peeler. You must be able to peel a peach or a tomato thinly enough that, with practice using the knife, you can see through the skin that has been removed.

We went back to Japan. The company that had made those original knives no longer exists, so we struggled to get a possible new maker to understand the importance of how the blades are ground. Finally after many attempts, they have accomplished that.

The four models are the the ones I use in my kitchen, particularly the 6" utility and the large peeler. The other two - the 8" Chef's Knife and the 2.5" Paring Knife - are essential. I just do not use them as often. There are two peelers. One for larger hands and one for smaller hands. The full tang blades are 8A at 57-59 Rc. The handle scales are pakkawood. Very thin and lightweight. These are for peeling and slicing. They are not for chopping. Made in Japan. Never put a sharp knife in the dishwasher. The abrasive detergent will dull the sharp edges and potentially ruin the handles.
