KAI Shun Classic Cutlery is a powerhouse in Seki City, Gifu Provence, Japan. Seki because of the location of iron, has been the center of the production of swords, knives and other cutting tools for the past 700 years. KAI has been a leader in kitchen and utility knives for over 90 years; they own Kershaw Knives of Portland, Oregon, as well as extensive production facilities in Japan and other parts of the Pacific Rim.
Damascus steel has been in use for many centuries, but rarely in kitchen knives. This Damascus is a little unusual with a center core of VG-10, a Vanadium, Cobalt, Molybdenum, high quality stainless knife steel at 61 Rc. That core is then laminated with 32 layers (16 on each side) of 410+nickel stainless producing a stainless Damascus. The bolsters and butt cap are engraveable 416 stainless. The handles are black laminated Pakka Wood. Individual knives are Gift Boxed.
A real man sized Chef's Knife of damascus clad super steel in traditional French styling. Blade measures 10-1/4" in length and 2" wide at the widest point. Weighs only 8.9 oz. Made in Japan.
