KAI was established in 1908 in Seki City, Japan's ancient samurai swordmaking capital. Since that time KAI has become one of the best blade makers in Japan.
This line has the look and benefits of Damascus steel but without rusting problems. The Damascus-look blade reduces sticking and causes less damage to the food being cut.
The Shun Classics feature the stable "D" shape handle design. The "D" shape rests in the curve of the fingers as they curl around the handle. The bolster is ground out more on the right side to provide an easy secure grip.
This 9" blade has a core of VG-10, then each blade is clad with 16 layers of SUS410 high-carbon steel on each side. Resulting in a hardness of 61 Rc. The bolsters and end caps are stainless steel. The 5-1/4" handle is ebony black water-resistant PakkaWood®. Made in Seki-City Japan. Weighs 6.5 oz. Suggested Retail $188.00
